Why is the COWGIRL a Farm to Restaurant participant?
Chef/Partner Patrick Lambert receives deliveries from LaMont's Buffalo, Robert Chavez and Tomato Girl during the summer season and Taos Mountain yak when it's in season. On average, he spends ~$25,000 on local food annually. He serves this to his customers both through specials and the regular menu.
