Why is THE SHED a Farm to Restaurant participant?
The Carswell family has purchased chile for the past 20 years direct from the farm in Hatch valley. Posole comes from Espanola Valley. Tortillas are made in the area and delivered by local distribution. They purchase local farm produce directly from farmers and through Farm to Restaurant Delivers during the July-October season
Why is purchasing local food important?

- Improved quality and consistency.
- To promote a closer relationship with our suppliers which benefits our business and the community in general.

Comments from Owner, Court Carswell:
"I like the information of the value network created by producing local food yielding opportunity for cultivation, support, harvest, packaging, processing, marketing, distribution and consuming. I think this fact can interest people in participating in the economic generation brought about from the local source of foods. We have been locally conceived, owned and operated since 1953 and base our food and flavors on local tastes which we have experienced in local homes"
