Why is the TREE HOUSE a Farm to Restaurant participant?
Owner Maria Bustamante-Bernal picks up fresh produce at the Farmer's Market although one or two growers bring their orders directly to the restaurant. She is interested in getting products delivered on a regular basis.
Why is purchasing local food important to Maria and the Tree House?
"Local foods are highest in nutrition, tastes the best and supports our local economy rather than an out of state economy. It is also more sustainable and has a smaller environmental impact."Who does she buy from locally?
Santa Cruz Farm • Romero Farm • Green Tractor Farm • Bee Tree Farm • Gemini Farm • One Straw Farm • Buckin' Bee Honey •Monte Vista Farm • Sungreen Sprouts • Desert Fungi • Red Mountain Farm • Harmony Farm • Heidi's Raspberry Farm • Mr G's • Beneficial Farms • Rasband Dairy
How much of food costs is spent on local foods?
About 85%
Do you have ideas for how to make it easier for Santa Fe restaurants to purchase local foods?
Have a place where restaurant owners/chefs can park when they go to the market. Help farmers economically so they can have competitive prices. EDUCATION: many customers do not understand why it is more expensive to be local and therefore won't spend the few dollars more per item it takes to run this kind of business.
